This cake's taste is excellent and perfect for the summer weather. It's essentially a Frasier cake but fancier. The almond meringue has a pleasant nutty flavour, as well as mascarpone mousse and fresh strawberry mix.


Recommendation = 9/10

If executed correctly, it is one fantastic cake to impress your guest or someone special. Texturally, it's creamy and fresh, with the strawberries alongside the almond meringue as the centrepiece. Visually also stunning with the different layers.

Create to impress your date's future in-laws. While there are a few steps to make this gorgeous cake, it is simple to assemble. It requires 1-2 days in preparation and should be consumed on the same day.

Types of tools you need:

- 4 Piping bags (or two reusables)

- Stick blender

- Tart ring (18cm by 7cm)

- Parchment paper

- Cooling rack

- Blow torch (not necessary, however, for more accessible cake release)


Ganache Monté

- 900g heavy cream

- 5 gelatine sheets

- 230g white chocolate

- 4 Vanilla bean seeds of a pod


Strawberry Spread

- 250g strawberry puree

- 100g sugar

- 2 sheet gelatine

- 3.5g agar agar

- 23g lemon juice

- 2 drops of strawberry essence (optional)


Almond Success

- 300g egg whites

- 225g sugar

- 325g ground almond

- 210g icing sugar

- 40g melted white chocolate


Strawberry Filling

- Fresh strawberries (50/50 for garnish and mix)

- 2 drops of strawberry essence (optional)

- 1-3 tablespoon sugar

- 2 teaspoon kirsh (optional)


Mascarpone Cream

- 375g mascarpone

- 4 gelatine sheets

- 45g heavy cream

- 2 egg yolks

- 2 egg whites

- 65g sugar

- 4 Vanilla bean


Finishing Touches

- Fresh strawberries

- Prepared Ganache Monté
